Valdeón Blue/Cow and Goat/Spain 3.25 Valdeón is a rich and creamy, intensely-flavored cow and goat's milk blue cheese. It is wrapped in Sycamore leaves which contribute to its complex flavor. It was named best blue cheese in a national competition in Spain.
Mahón/Cow/Spain 3.5 This is one of a few cow's milk cheeses from Spain. Mahón boasts a certain sharpness, and its lemony, salty flavors evince the rural Mediterranean seascape. At peak, Mahón is tangy, intense and delicious.
Caña de Cabra/Goat Milk/Spain 3.25 A soft-ripened cheese that is creamy and mild. It has a full and happily satisfying flavor with tangy citrus notes that balance the rich creaminess.
